Browsing through one of Paul Bocuse’s books recently, I came across a passage in which he describes the art of excellence which he says can be achieved through mastery of the basic techniques that give the craftsman or woman the intellectual base on which to build their intuitive and creative expression. “Excellence is an exceptional and enduring level of quality; it fulfils desire,” he says, adding “The art of excellence is in knowing, so that we can understand and can act.”
In other words, excellence is a non-stop job underscored by change, growth, adaptation and listening.
